Sara and William are a couple of passionate restaurateurs who approached us with the idea of creating a one-stop gourmet destination in Gaspé. Their vision was clear: to become a benchmark for Gaspé gastronomy accessible to all. Part grocery store, part bistro and part restaurant, their spot would have a little something for everyone, featuring local produce from vegetables to meat to condiments.

Positioning them as Gaspé’s gourmet hangout, it was clear that the town and its identity would be part of the name that would follow. Sarcelle is the name of the colour created by combining the blue of the ocean and the green of the Gaspé valleys, but it’s also a bird that’s hunted and served in Gaspé. It’s a name that inspires freedom, warmth and the sharing of local nature.
